Since Brass Knuckle Bistro had popular vegan items, Spice is considering adding a vegan biscuit and gravy option to her menu as well - but only in the White Center location. This location is much bigger than the chain’s other outposts in Belltown, Pioneer Square, and near Pike Place Market, including seating for 50 and more room on the grill to experiment. The new kitchen will have enough room for the chain to experiment with new menu items. Though the three current outposts already have some vegetarian and gluten free options, the new location may also add some more vegetarian items that had dropped off the menu in the past, such as collard greens and black eyed pea hummus. Favorites such as the colorfully-named Hot Mess Bitch, a biscuit smothered in garlic grits, cheese, and house-made gravy, will be available ( pop star Lizzo’s a fan). The new spot will take over the space formerly occupied by well-regarded sandwich shop, Brass Knuckle Bistro, which closed in April. The White Center Biscuit Bitch is about double the size of other locations. This will be the chain’s fourth location. Spice also shared some photos of the new place, which includes a mural on one wall by well-known Seattle artist Rick Klu, a rainbow American flag, and a case for merchandise. The irreverent breakfast and lunch chain Biscuit Bitch will open a new shop at 9602 16th Avenue SW September 5, owner Kimmie Spice announced on Facebook. Good cider, wine or bitter are worth a try here. The chef at Biscuit Bitch cooks tasty biscuits, crumble and flija.
